Urad dhal (Black Lentil) Recipes from Sri Lanka 🫘 Indian and Sri Lankan Dosai, Sambaru & More!

I’m harvesting the urad bean, also known as black gram and many other names, and will show you the journey these beans make from the field to your plate. (Or banana leaf!) ➡️ I’ll prepare today’s dishes in a traditional way: soaking and removing the skin, creating a bean paste on a stone grinder, and cooking over a wood fire on a clay stove. Today’s menu consists of chili shrimp ulundu vadai, sambar, crispy dosa, and more! Urad bean is related to mungo and is popular throughout South Asia. ➡️ Not only can it be used in soups like sambar, a vegetable mix with curry and tamarind, but it also goes well with sweeter foods like dosa, which is like a lentil-based pancake.
