
Today I’m going to show you how to make my favorite super easy Tex-Mex SHREDDED BEEF ENCHILADAS, now let me tell you these are so easy all you need is a pressure cooker and 1 hour, this enchiladas I like to serve them as I go, the heat from the sauce and tortilla will melt the cheese but ofc you can always bake them all together, regardless it’s seriously the BEST! I promise you even if you are not a mazapán fan you will for sure enjoy it ❤️

Ingredients:
2 lbs beef I’m using pot roast
1 small onion;small diced
5 smashed garlic cloves
1 cup crushed tomatoes
2-3 chipotles in adobo sauce
2 tbsp chili powder
1 tbsp ancho powder
1 tbsp oregano2 tsp black pepper
1 tsp chipotle powder
1 tsp ground cumin
1 tsp coco powder
1 tsp ground cinnamon
Salt to taste
1/2 cup instant corn masa (Maseca)
For the enchiladas
Corn tortillas
Medium cheddar cheese
