We all need a sweet treat. Here is my special treat for this weekend.

Recipe:
Ingredients:

- 2 cups rolled oats (you can blend these into oat flour if you prefer a smoother texture)

- 1 cup unsweetened apple sauce

- 1 cup grated carrots (about 2-3 medium carrots)

- 1/2 cup raisins

- 3 medium eggs

- 1 teaspoons ground cinnamon

- 1 1/2 teaspoons baking powder

Instructions

1. Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round or square cake pan, or line it with parchment paper for easy removal.

2. Prepare Oats

If you want a finer texture for the cake, you can pulse the rolled oats in a blender or food processor until it resembles oat flour. If you prefer a chunkier texture, you can leave the oats whole. I used my blender to make oat flour.

3. Mix Dry Ingredients:

In a medium bowl, combine the oat flour, cinnamon, and baking powder. Stir well to ensure the ingredients are evenly distributed.

4. Prepare Wet Ingredients

In a large bowl, whisk the eggs and apple sauce together until smooth and well combined.

5. Combine Wet and Dry Ingredients:

Add the dry oat mixture into the wet ingredients. Stir gently until just combined. The batter should be thick, but if it's too dry, you can add a splash of water or applesauce to loosen it.

6. Add Grated Carrots and Raisins

Fold in the grated carrots and raisins. The carrots will add moisture to the batter.

7. Pour and Bake

Pour the batter into your prepared pan and spread it out evenly. Bake for 30 minutes, or until a toothpick inserted into the centre comes out clean or with a few moist crumbs.

8. Cool and Serve:

Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

2. Blend the Ingredients:

In a blender, combine the chopped apples, cocoa powder, and eggs. Blend until smooth and well combined, forming a thick batter. You may need to scrape down the sides of the blender a couple of times to ensure everything blends evenly.

3. Microwave Cooking:

Pour the brownie batter into a microwave-safe mug or bowl (around 8-10 oz size).
Microwave on high for 5 – 10 minutes, checking at the 5-minute mark. Depending on your microwave, the time may vary. The brownie is done when it has risen slightly and a toothpick inserted into the centre comes out clean or with just a few moist crumbs. Mine took the entire 10 minutes.
4. Cool and Serve:

Let the brownie cool for a minute or two before serving. You can eat it directly from the mug or bowl.
