Recipe for the Christmas wreath bread
500g bread flour
10g instant yeast
300ml lukewarm milk
2 eggs
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1.5 balls mozzarella (about 200g total)
50g grated cheese (I used mozzarella and emmental)
About 2 tablespoons green pesto (I used it from a jar this time)
A few sprigs of fresh rosemary
A handful of cherry tomatoes
Ribbon
Mix the flour with the yeast, milk, 1 egg, salt, garlic and onion powder in a KitchenAid for 15 minutes until you have a nice ball of dough that doesn’t stick to the sides of the bowl. Cover with a damp kitchen towel and leave to rise for one hour in a warm place.
Preheat your oven to 180 degrees Celsius. Cut the mozzarella in small pieces.
Transfer the dough to a floured surface. Cut into 16 pieces. Flatten each piece of dough, put 1/3 teaspoon pesto on the dough, then a piece of mozzarella and wrap the dough around it to shape it into a ball. Place it on a baking sheet lined with parchment paper. Continue with the other pieces of dough and make a wreath. You will probably have a few balls extra. I used them to make a little flower shaped extra bread. Whisk the second egg and brush the bread with the egg. Sprinkle a little of the grated cheese on top. Bake for 20 minutes.
Take the bread out of the oven and arrange the rosemary on the bottom, tie it with the ribbon. I placed the little bread in the middle of the wreath and decorated with a few cherry tomatoes. You can also serve the smaller bread separately so you have a beautiful proper wreath shaped bread.
Serve with soup or toppings such as extra pesto, tapenade or butter.
Thanks so much for being here and for your support! Happy holidays to you and your loved ones and see you next year!
