呢個食譜就緊要係個潮式醬汁,惹味開胃,酸酸甜甜咁非常好食。可以應用係唔同嘅海鮮上面,包括花甲,聖子,墨魚,魷魚。你鍾意就得。
呢個比例可以比大家參考,自由加改。
潮式醃料比例:
蒜蓉 8粒
乾蔥頭 1個
薑 5片
生抽 100ml
醋 20ml
麻油 1湯匙
魚露 150ml
花雕酒 50ml
糖 3茶匙
雞粉 1茶匙
水 120ml
辣椒 2條
芫荽 2棵
Chiu Chau Marinade ratio:
8 cloves of garlic
1 shallot
5 slices of ginger
Light soy sauce 100ml
Chinese Dark Vinegar 20ml
Sesame oil 1 tbsp
Huadiao Wine 50ml
Sugar 3 tsp
Chicken powder 1 tsp
Water 120ml
Chili 2 pcs
Coriander 2 stalks
