Lemon Kale Caesar Salad Recipe ⬇️

Step 1: Prep Your Kale
Remove your kale leaves from the stems so you don't have extra chewy pieces. Cut your kale leaves into relatively small bites and add those to a bowl.

Step 2: Make Your Dressing
Into another bowl add an egg yolk, a little Tobasco, some dijon mustard, some smashed garlic, and a couple of anchovies. Yes, anchovies. Mash these together until you get a smooth consistency.

Start quickly whisking your dressing as you drizzle in some good olive oil. Finish with some fresh lemon juice, a dash of red wine vinegar, Parmigiano Reggiano, lemon zest, and some black pepper.

No need to add any additional salt— the anchovies add plenty. Mix everything together until it's nice and smooth.

Step 3: Mix and Enjoy
Pour your dressing over your kale and massage it in to every leaf. Not only will this give you an equal coating of dressing, but you'll tenderize your kale for a better taste overall.

Add some croutons and a little more Parmigiano Reggiano and you're ready to eat.
