Ramadan Special Series!

We’re making three delicious dishes: Homemade Yogurt, Afghan Achar, and Green Chutney.

✨ Homemade Yogurt:
• Boil 1 gallon whole milk until about 1 inch evaporates.
• Let it cool until warm (not too hot or cold).
• Mix ½ pack Desi yogurt + juice of 1 lemon in a bowl, then pour the warm milk over it.
• Cover and let it sit at room temp (12 AM - 7 AM), then refrigerate for a day to thicken.

🥕  Afghan Achar:
• Boil pumpkin, carrots, mini eggplants, cauliflower, and green chilies until tender. Let cool.
• Blend 1 red bell pepper, 3 jalapeños, cilantro, and water into a thick sauce.
• In a container, layer veggies with salt, crushed mustard seeds, and sauce.
• Pour over white vinegar + reserved veggie water until fully covered.
• Let sit 2 days at room temp, then store in a glass jar in the fridge for up to 6 months!

🌿 Green Chutney:
• Blend garlic, spicy green chilies, 3 packs cilantro, 2 packs mint, amchur powder, salt, and lemon juice into a thick paste.
• Adjust salt/spices to taste.
• Freeze in an ice cube tray, then store in a Ziploc bag for easy use!
