Assalamu Alaykum! Today, we are preparing egg rolls and Shami kebabs for Ramadan.

Step 1: Making Chicken Broth for Egg Rolls

First, we prepare the chicken broth. You’ll need:
• Chicken (a small amount)
• Turmeric
• Black pepper
• Salt

Step 2: Preparing Shami Kebab Mixture

For Shami kebabs, you’ll need:
• Boneless red meat
• Bengal gram lentils (Chana Dal)
• One red onion
• Green chilies
• Garlic & ginger (fresh paste)
• Garam masala
• Turmeric
• Black pepper
• Coriander powder
• Cumin seeds
• Chili flakes
• Cinnamon stick

Add everything into a pressure cooker and cook for 45 minutes. Once done, transfer the mixture to a large bowl, mix well, and add:
• 2 eggs
• Homemade garam masala
• Salt
• Freshly chopped mint & cilantro

Mix everything well and refrigerate for 20 minutes to marinate.

Step 3: Preparing Egg Roll Filling

For the egg roll filling, you’ll need:
• Carrots
• Cabbage
• Chicken breast
• Onion

1. Shred the carrots and cabbage finely.
2. Add salt to them, mix well, and let sit for 10 minutes to release excess water.
3. Shred the chicken breast.
4. After 10 minutes, squeeze out the excess water from the cabbage and carrots, then rinse with cold water three times.

Step 4: Cooking the Egg Roll Filling
1. Heat a little oil in a pan, add one chopped onion, and sauté for two minutes.
2. Add shredded chicken, black pepper, salt, Chinese salt, mustard seeds, and crushed chili.
3. Stir well, then add the cabbage and soy sauce.
4. Finally, add the carrots, mix everything well, and remove from heat.

Step 5: Freezing the Shami Kebabs
1. Take a plastic container and place baking paper at the bottom.
2. Arrange the Shami kebabs in a single layer, then cover with another sheet of baking paper.
3. Repeat this layering process until all the kebabs are arranged.
4. Cover the container and freeze.

Step 6: Assembling and Freezing Egg Rolls
1. Mix a little flour with water to make a thick paste.
2. Take egg roll sheets, apply the flour paste around the edges, and place the filling in the center.
3. Roll tightly, sealing all sides properly.
4. To freeze, follow the same layering method as Shami kebabs using baking paper.

Step 7: Cooking Instructions
• Egg Rolls: Fry directly from the freezer in medium-heat oil. Do not use very hot oil.
• Shami Kebabs: Take them out of the freezer 10 minutes before cooking, dip in egg wash, and fry in oil.

This method is quick, easy, and perfect for Ramadan, especially for those who work full-time and have limited time to cook!👩🏻‍🍳
