
INGREDIENTS for Lemon Curd:
100 ml lemon juice (2 lemons)
10-15 g lemon zest (2 lemons)
110 g sugar
3 eggs
90 g butter
a pinch of salt
Mix eggs with sugar, add lemon zest, then lemon juice and butter. Add a pinch of salt. Boil the cream in a water bath until thick.
Immediately rub the cream through a sieve to get rid of the lemon zest and get a uniform cream.
Cover the cream with film and cool.
Delicious settling lemon cream is ready!
