Do you really think that people don't know when you're serving them leftovers?
Sometimes, it's better to tell your guests that you're out of an item than to serve them a subpar or day-old product.
There has to be a balance. If you're open until 6 PM and you keep selling out by 12, then you're going to need to plan a little differently.
Your guests are trusting you to deliver on the promise of quality. If you let them down, I can promise that they'll stop showing up.
