Step 1: Prepare Your Base
Add hard pickles, a little pickle juice, a stalk of celery, parsley, red wine vinegar, mustard, salt, pepper, mayo, a cherry bomb, lemon juice, and lemon zest to a blender or food processor and pulse until nice and creamy.
Step 2: Chop Your Veggies
Finely dice celery, parsley, 1/4 onion, pickles, and a cherry bomb pepper, and add to a large bowl
Step 3: Add Your Tuna
Add a jar of tuna in olive oil (preserve the oil for later), and a can of albacore tuna to your veggies.
Pour on your sauce and add some dill relish, red wine vinegar, lemon juice, and some of the tuna olive oil.
Mix until well combined.
Step 4: Assemble Your Sandwich
Oil the interiors of a couple of slices of white bread and add some fresh Boston Lettuce.
Pile on your tuna salad and top with avocado slices, pickled red onions, pickles, salt, pepper, and a squeeze of lemon juice.
Summer is coming up, and there is something so refreshing about a tuna salad sandwich on hot days.
Give it a try and let me know what you think.
