🌅 Introduction & Setting Off on the Amritsar Breakfast Adventure

Hey guys, Sam here! In today’s India episode, you’re joining us on a mouth-watering North Indian breakfast street food tour in Amritsar, Punjab. Guided by our local friend Deepak from Amritsar Walking Tours, we dive into the city’s best local breakfast spots to sample some of the region’s most beloved dishes.

🥖 Stop #1: Amritsari Kulcha – Iconic Punjabi Breakfast

Legendary Eatery: We kick things off at a 65-year-old Amritsari Kulcha shop, famed for their crisp, ghee-brushed flatbreads cooked fresh in a tandoor oven.

How It’s Made: Watch as the dough is stuffed with a blend of local spices, rolled into balls, and slapped onto the walls of the fiery oven, resulting in a golden-brown, crispy exterior with a soft, flavorful center.

Traditional Pairing: Kulcha is always served with chole (spiced chickpea curry) and a tangy tamarind chutney for dipping.

Tasting Experience: The flavors explode with every bite—the crunch, the heat, the unique masala from each family-run shop, and the local legend that the “water of Amritsar” gives it a one-of-a-kind taste.

Local Ritual: As Deepak shares, “If you’re in Amritsar and haven’t had kulcha, your trip isn’t complete!” Expect long lines on weekends—totally worth the wait!

🧀 Stop #2: Paneer Bhurji – Punjabi Scrambled Cheese Perfection

What is Paneer Bhurji? Next, Deepak leads us through the winding lanes of Old Amritsar to a famous paneer bhurji vendor. This dish features scrambled Indian cottage cheese cooked with onions, tomatoes, lots of butter, and a secret masala blend unique to each chef.

Preparation: Watch the sizzling butter and see how the chef’s skill transforms simple ingredients into a rich, satisfying breakfast classic.

Served With: Enjoyed with fresh bread and two kinds of chutney—mint and tamarind—adding vibrant layers of flavor.

Our Verdict: “Ultimate paneer dish—creamy, flavorful, and oh-so-satisfying. A high-calorie treat that’s worth every bite!”

🥤 Stop #3: Amritsari Lassi – The Ultimate Breakfast Drink

Historic Lassi Shop: The final stop is a legendary lassi shop that’s been serving locals for over 60 years.

What Makes It Special: Here, lassi is served in giant traditional glasses, topped with a mountain of fresh cream (malai) and house-made butter.

Taste Test: Creamy, lightly sweet, ultra-refreshing, and with a richness that only comes from using milk from their own cows.

Pro Tip: “A breakfast in Amritsar isn’t complete without lassi!”—the quality here is second to none.
