This is one of my favourite salad recipes because it is super easy, delicious and more importantly, healthy. Quinoa is rich in protein, dietary fibre, vitamins and dietary minerals. This recipe is one of my go-tos when I am watching my weight, or when I just want to eat healthier meals. Give it a try and let me know what you think. Happy cooking!!!
***INGREDIENTS***
2 cups quinoa
2 bell peppers
1 lemon
1-2 spring onions
1 cucumber
300g cherry tomatoes / 1 large tomato
1 tablespoon olive oil
Salt (to taste)
Black pepper (to taste)
Serves 4-5 plates
