
Step 1: Prep & Marinade the Chicken
Create a marinade by combining yogurt, ginger, salt, pepper, cayenne, a glove of grated garlic, and the juice of half of a lime in a bowl and mixing well.
Slice chicken breast or thighs into cutlets before adding to your marinade and tossing until each piece is well coated.
Cover and let the flavors marry and the yogurt tenderize your chicken for at least 2 hours.
Step 2: Cook the Chicken
After your chicken has marinated, remove it from the fridge and preheat your air fryer to 425º.

Whisk until well-combined and creamy.
Step 4: Make an Easy Slaw
Shred or slice cabbage, cucumbers, red Thai chilis, and red onions, and add them to a bowl.
Add salt, pepper, sliced red onion, a little sugar, rice vinegar, and a little bit of neutral oil before tossing until every piece is coated.
Step 5: Assemble the Masterpiece
Start with a fresh loaf of soft bread, and spread your peanut sauce on the bottom before topping with a layer of slaw.
Pile on your chicken while it's nice and hot, before topping with another layer of slaw, and finishing with more of that delicious peanut sauce.
