Dice up your onions of choice into a mixture of thick and thin slices and set them aside. These are going to shrink down while cooking, so prep more than you think you'll need.
Preheat a large pan over high heat and add your onions. Toss frequently to keep them from burning.
Once they are all a nice golden color, reduce your heat to low. Sprinkle with salt, and stir continuously while they finish cooking.
The greatest thing about this method is the balance of flavors and textures you'll have. The smaller diced pieces will get a lovely char, while the larger ones will add sweetness.
