COLD CHILI GARLIC TOFU (Serves 1 to 2)

1 340g box, silken or soft tofu, drained
1/2 large cucumber, thinly sliced
2 green onions, chopped
1 red Thai chili pepper, diced
1 clove garlic, diced
1/2 thumb ginger, diced
1 teaspoon hoisin sauce
1 tablespoon chili crisp
2 teaspoons rice vinegar
1 teaspoon sesame oil
3 tablespoons soy sauce
Sesame seeds, for garnish, as desired

Add a drained block of soft tofu to a plate or bowl.

In a jar, combine the cucumber, green onions, chili pepper, garlic, ginger, hoisin sauce, chili crisp, soy sauce, rice vinegar and sesame oil. Give it a shake and allow to sit for five minutes to marinate.

Pour over the tofu and enjoy immediately. For a larger meal, you can pair this with rice and nori.
