A COMBINATION OF RICH BROTH, YOGHURT AND MINT - INCREDIBLY DELICIOUS CREAM SOUP, WILL LOVE YOU IN TURKISH CUISINE

WE TAKE:
🔹chicken broth (pre-cook for at least 1 hour)
🔹 round rice at the rate of 1-2 tbsp
for 1 liter of broth, it will boil
🔹 homemade or thermostatic yogurt 300 gr (based on 1 liter of broth)
🔹 egg yolk 1-2
🔹 flour 1-2 tbsp
🔹 olive oil 1-2 tbsp
🔹 butter 1-2 tbsp
🔹 spices: salt, DRIED MINT, sweet paprika (optional)
🔹lemon for serving

WE DO:
✅ cook rich chicken broth with bay leaves, black pepper, onions and carrots, salt and spices to taste. Strain.
✅ add rice to the strained broth and cook until cooked, salt to taste
✅ thicken the broth with rice and make it creamy: melt 1 tbsp of butter and 1 tbsp of flour in a pan, mix and add a little broth
✅ mix yogurt, yolk and creamy mass of flour, add to the broth with rice - we get soup
✅ for dressing: heat mint in olive (or butter) oil until aroma and color appear, a few seconds, do not burn it! I added paprika for color
✅ Serve the soup immediately with a slice of lemon and mint dressing, sprinkle with dried mint to taste!

* to prepare such a soup, it is good to have a broth already cooked, the broth can be frozen and used when you want something unusual
* this soup can be cooked on water, then add more mint dressing and oil for taste, but on the broth it tastes better
* so that the yogurt does not curdle in the soup, be sure to add the egg yolk
* adjust the thickness of the soup as desired with the desired amount of rice and the density of the flour dressing
* you can add a fresh mint leaf to serve, if available
