
Step 1: Clean, Cut, & Soak the Potatoes
Scrub your potatoes well before slicing into strips. Soak in cold water for about 30 minutes and then let them air dry on a clean towel.
Step 2: Prepare the Fries
Heat oil to 350º and place in your fries. Let them fry for about 5 minutes before removing to cool.
Shash a clove of garlic or two, slice a shallot into rings, dice up a cherry bomb, and remove fresh rosemary, thyme, and sage from the stems.
Step 3: Finish with a Fry
Add your fries and herbs/spices into the fryer and use a heat-safe spoon to gently move them around in the oil.
Let these fry for 4-5 minutes before removing to a plate and finishing with some Kosher salt.
I don't know how to eat fries without our Jalapeño Ketchup, but these are great with any dipping sauce.
