Ribeyes are cut from the rib area of the cow and have a generous amount of fat marbling throughout and around the edges.
Yes, they're pricey, but that's because all of that fat is flavor.
New York Strip:
NY Strips (or Kansas City Strips) are sirloin steaks which means they're taken from the short loin of the cow. They have some fat marbled throughout but, generally, they are a much leaner cut.
This is a more budget-friendly cut of meat, but it still packs a lot of flavor.
