
Potato Rolls with Avocado Tuna Filling
Ingredients:
2 medium potatoes thinly sliced
1/4 cup shredded cheese
1/2 ripe avocado
1/2 can tuna (drained)
3 tbsp plain yogurt
Salt to taste
2 tbsp finely chopped red onion
Cucumber slices (thin)
Instructions:
Mix avocado, tuna, yogurt, salt, and chopped red onions in a bowl until creamy and combined.
On a baking sheet lined with parchment paper, layer thin potato slices into a rectangle. Sprinkle shredded cheese in the middle layer.
Bake at 200°C (390°F) for 15 minutes until golden and set.
Let it cool slightly, then spread the avocado-tuna mixture on top. Add a line of cucumber slices.
Carefully roll it up like a sushi roll using the parchment paper to help.
Slice into rounds and serve!
