
There’s nothing like a bowl of Caldo de Albóndigas to warm you up! 😋 So today I'm making Albóndigas de Camarón. This seafood twist on a classic Mexican dish is as comforting as Birria de Res, Frijoles Charros, Pozole, and Menudo 🥰
ALBÓNDIGAS DE CAMARÓN INGREDIENTS:
For the Albóndigas:
► 2 lbs. shrimp
► 1 egg white
► 1/2 tsp black pepper
► 1 tsp garlic powder
► 1 tsp onion powder
► Some cilantro
► Salt to taste
For the salsa:
► 4 roma tomatoes
► 1 onion
► 3 garlic cloves
► 2 guajillo peppers
► 1 chile de arbol
► 1 chipotle pepper in adobo sauce
► 2 1/2 tbsp shrimp bouillon
► 1/2 tbsp oregano
► 2 cups boiling water
For the caldo:
► 3 carrots
► 2 celery sticks
► 6 cups boiling water
► 2 bay leaves
► Salt to taste
► Some cilantro
