Should a restaurant serve its guests right before closing time?

When it comes to the term "closing time" a lot of people seem to think that's when restaurant workers are supposed to leave home for the day. That’s not the case. 

The hours listed on the door or online are so guests know exactly when they will be able to place an order. So, if a guest shows up anytime during that timeframe, we are going to serve them... even if it’s 1 minute before the posted closing time.  

A kitchen should not close 15 minutes before the posted closing time.
