Here's how you make these addictive Crispy Cheesy Potato Balls. 

Ingredients:
- Potatoes
- Eggs
- Salt & Pepper
- Cheese (3-4 varieties of your choice)
- Parsley
- Paprika
- Cayenne
- Flour
- Cornflakes
- Oil (optional, for frying)

Step 1: Prepare Your Base
Peel your potatoes and boil until they are fork tender. Drain thoroughly then add them to a bowl and mash them until creamy. 

Add 1 egg, salt, pepper, parsley, paprika, cayenne, cheddar & parmesan cheese (or similar), and a little flour to your potatoes and mix things up really well. 

Set in the fridge to chill completely. 

Step 2: Make Your Potato Balls
Once chilled, add a little of the mixture to your hand and flatten it out into a disk. 

Add cheese to the center, and carefully fold the dough around it until you have a ball. Repeat until you've used up all of your potato mixture. 

Step 3: Batter, Fry, and Enjoy
Create your batter station with four in one bowl, egg wash in another, and cornflakes in the third. Roll your balls in the flour first, followed by the egg wash, and finishing with the cornflakes. 

Heat your neutral oil or air fryer to 350º and fry your potato balls until they're nice and crispy. Get ready for one of the best cheese pulls of your life. 

These are so great for the holidays because you can make them ahead of time and fry them right before dinner.
