I arrange a soft, natural spring bouquet before heading into the garden to pot flowering plants and enjoy the first true warmth of the season. With the woods in bloom, it’s also time for wild garlic foraging, one of my favorite spring rituals. Back home, I prepare a rustic tart with homemade wild garlic pesto and pickled buds, and end the day by setting a simple, flower-strewn table beneath our blossoming cherry tree. * PICKLED WILD GARLIC BUDS *
Place buds in a sterilized jar along with seasoning of your choice (sea salt, pepper, herbs) and pour boiling appli cider vinegar over. Seal the jar and let sit in a cool dark place for 1 month before eating.

Quantities depend on your preferences.
Mix wild garlic leaves, parmesan, pine nuts and olive oil.
