Who’s ready for some nopales rellenos? 😋 They’re similar to chiles rellenos but with a twist! I love serving mine over a bed of rice, topping them with salsa, and pairing them with refried beans. NOPALES RELLENOS INGREDIENTS:
For the salsa:
► 3 tomatoes
► 1 serrano pepper
► 1 guajillo pepper
► 1 puya pepper
► 2 garlic cloves
► 1/4 white onion
► 1/2 tbsp chicken bouillon
► 1/2 tbsp tomato bouillon
► 1 cup water (from where we boiled tomatoes)
For the nopales:
► 8 nopales (prickly pear cactus)
► Some salt
► Small piece of white onion
► Monterrey Jack cheese
► All-purpose flour
For the egg batter:
► 5 eggs
► 1 tbsp all-purpose flour
► Pinch of salt
