I have many beautiful memories of me helping my mom cut small tender Nopalitos off the big cactus plant we had in our back yard when we were growing up, mom kept it in very good shape because it gave us many cactus pads. My sisters and i sat in the back yard under a big tree and helped my mom remove the spines off the pads, then we washed them well and either diced or sliced them for a delicious meal to come. Nopalitos as we know them are very nutritious and delicious and they are very popular here in South Texas where I was born and raised. Nopalitos can be cooked many different ways and can also be added to cold salads, many people don’t know how delicious they are until they try them. INGREDIENTS—————————————
1 1/2 lbs 80/20 ground beef
1/2 small onion (julienned)
1 Serrano pepper (seeds removed and sliced) optional
Chopped Cilantro as needed
1/2 tsp Onion powder
1/2 tsp Garlic powder
Salt as needed

MOLCAJETE INGREDIENTS———————-
1/2 tsp whole cumin
1/2 tsp peppercorns
2 large garlic cloves
1/2 C. Water

BLENDER INGREDIENTS——————————
5 Roasted large Roma tomatoes
2 soft Guajillo peppers
Mixture from molcajete
1 3/4 C. Water
1/4 Small roasted onion

TO COOK NOPALITOS INGREDIENTS ———————
36 ozs. Diced fresh Nopales (or store bought canned)
1/4 small piece onion
1 large garlic clove
Salt as needed
