Mimosa salad is a festive salad.Mimosa salad got its name because of its reminiscence of "mimosa", spring flowers, scattered on the snow. If you don' t like tuna, you can use salmon or even chicken instead.
For years, Mimosa salad is considered as one of the musts on the table when there is a big family event or a New Year celebration. Even though the salad is made with mayonnaise, the taste is very tender and light.I make this salad all year round.
Ingredients:
1 can of tuna in brine
3 or 4 boiled eggs
3 boiled carrots
3 boiled potatoes or 6 small potatoes
1 onion
100-150 gr of mayonnaise I know mayo would put off many of you. But, there are solutions. Use light mayonnaise that is low in fat, or make your own!
salt and pepper to taste
