The shrimp “cooks” in lime juice, the acid in lime juice denatures the proteins in the shrimp, effectively cooking it without heat. This process changes the shrimp's texture and color, making it appear opaque and firm, similar to traditional cooking methods. However, it's important to use fresh, high-quality shrimp and allow it to marinate in the lime juice for at least 30-45 minutes to ensure it's safe to eat. Just keep in mind that while the shrimp is technically "cooked," it may not be fully cooked in the way that heat would do, so it's best to use this method for fresh shrimp. Or you can also just simply cook the shrimp before 😊
