- 1 tbsp olive oil (for roasting)

- 1 tsp salt
- 1 tsp black pepper or chili flakes
- 1 tsp dried rosemary
For the Avocado Salad:
- 1 avocado (chopped or smashed)
- 1 medium tomato (chopped)
- ½ red onion (finely sliced)
- 1 tbsp lemon juice
- ½ tsp salt
For the Healthy Dip:
- 1 cup plain yogurt
- 1 tbsp olive oil
- 1 tsp dried rosemary
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp lemon juice
- 2 tbsp fresh coriander (chopped)

Instructions:
1. Prepare the Potatoes:
- Preheat the oven to 220°C (390°F).
- Boil the potatoes until fork-tender, then drain.
- Lightly grease a baking tray with olive oil. Place the cheese then potatoes or halves if too big. Smash then add seasonings.
- Sprinkle shredded cheese or Parmesan on top.
- Roast in the oven for 10-15 minutes or until golden and crispy.
2. Make the Avocado Salad:
- Combine avocado, chopped tomatoes, and red onion in a bowl.
- Drizzle with lemon juice and season with salt. Mix gently and set aside.
3. Prepare the Healthy Dip:
- In a small bowl, mix yogurt, olive oil, dried rosemary, salt, pepper, lemon juice, and chopped fresh coriander. Stir until smooth.
4. Assemble and Serve:
- Plate the smashed roasted potatoes alongside the avocado salad. Serve with the healthy yogurt dip on the side.
