So next time you make tamales for a big crowd you make the BEST tamales , What????? Yess you can!!! this is our family’s recipe that we make every year! My dad always in change of the masa because to be honest it’s a really good arm workout but once you do it the way I showed you here, ohhh let me tell you it will go by fast! For the meat, in a large pot cover meat with water add salt. 2 onions, 2 garlic heads garlic, and 5 bay leaves, bring to a boil, remove impurities from meat, cook for 3 hours over medium heat

✅cook the filling the night before
✅ mix by hand for 5 minutes in between each batch of masa flour of course make sure it’s really really really well mix depending on how much work you put in in those 5 minutes well it will depend how fluffy your masa gets!
Ingredients: up to 200 tamales
2 large bags of cornhusk(make sure to soak them)
20 lbs meat, I used 15lbs beef chuck and 5 lbs pork shoulder
1/2 lb (45-50) dried Chile pods I used hot and extra hot New Mexico
6 oz (12) dried chile ancho
Chile árbol (optional)
1 head of garlic (12 garlic cloves)
2 lbs(20) tomatillos
1 tbsp cumin seeds
Salt to taste I used 2 tbsp
For the masa
8lbs Maseca for tamales
3 1/2 lbs (7 cups) lard
5 tbsp baking powder
Salt to taste I added 4 tbsp
14 1/2 cups broth from meat
12-14 1/2 cups water**make sure your masa is well hydrated and not crumbly
