Here is my pickled onion recipe that you should have in your fridge at all times:
Step 1: Prep Your Veggies
Thinly slice your red onions, a couple of chilis, and some beets and set aside.
Step 2: Fill Your Jar
Add your sliced vegetables to your jar along with some whole coriander seeds and black peppercorns, a pinch of salt, and some whole bay leaves.
Step 3: Add Your Liquids
Boil 1 cup of water with 1 cup white vinegar and a little sugar. Once boiling, carefully pour into your jar, seal it well, and give it some good shakes.
Flip it upside down and let all of those flavors marry for at least an hour.
In my house, these barely last a day, because we add them to almost every meal.
