
Step 1: Thoroughly Dry
Whether you're using fresh or thawed fish, you need to pat it dry (skin-side, too) if you want the best outcome.
Step 2: Even Seasoning
The best way to evenly season your food is to sprinkle on your salt, pepper, etc. from higher up. This way, you won't run into those overly salty bites.
Step 3: Proper Cooking
Heat oil in a pan and place your fish skin-side down. Use a spatula to gently press the fish into the pan and then let it cook, undisturbed.
Let that cook until it's about 90% done before flipping for the final 10 seconds or so. You'll never have to worry about dry salmon again.
Step 4: The Perfect Pairing
For salmon, a lemony salad goes perfectly with it. Toss your favorite greens in a little olive oil and fresh lemon juice before topping with your perfectly-cooked salmon.
