
WE TAKE for 2-3 servings:
🔹 onion 400 gr
🔹 garlic -2 cloves
🔹 flour 1 tbsp
🔹chicken broth 400 gr
🔹 butter 50 gr
🔹vegetable oil 20 gr
🔹 cream 10-20% - to taste
🔹 lemon juice - 1-2 tbsp
🔹 toast bread -2 pieces
🔹 Parmesan cheese - 50 gr
🔹 soda - 1/5 tsp
🔹 spices: salt, nutmeg
WE DO:
✅ onion cut into thin strips, finely chop the garlic
✅ pass onion and garlic in a mixture of vegetable and butter until soft, add spices and soda to extract juice
✅Sprinkle the onion with flour, mix and add the chicken broth and cream until the desired density
✅ put the soup in a baking dish, put white bread on top and sprinkle with cheese - bake in the oven at 220 degrees until a crust appears for about 5 minutes (be guided by the heat of the oven)
✅ serve soup immediately! You can also separately serve soup in a bowl, bake toast with cheese separately.
* in the classic recipe, white wine, port, etc. are added instead of lemon for acidity, in my opinion: a pinch of soda and lemon juice did a great job!
* add cream as desired and adjust the density of the soup using the amount of flour and broth
* you can add bay leaf and thyme, I managed with nutmeg and cream - so tender!
