
1. Get a Microplane and your citrus of choice. Make sure you're gripping both firmly.
2. Rather than rubbing the citrus against the Microplane back and forth, zest and rotate the citrus against the plane, carefully working your way around the whole fruit.
You'll be left with a beautiful pile of bright, flavorful zest without any of the bitter white rind. You will also produce more zest with this proper method.
Zest can make dishes so flavorful, but that will never happen if you're not doing it right.
