Recipe for rustic sourdough bread:
150 grams of sourdough 100% moisture
350 grams of wheat flour
45 grams of whole grain flour (wheat, or rye, or spelled)
230 grams of water
10 grams of salt
Mix all ingredients except salt.
• Autolysis 30-40 minutes
• Then add salt and knead the dough well.
• Fermentation 3 hours, during this time make 3 obinki (stretches)
• Form the bread and put it in the proofing basket.
• Proofing is better in the refrigerator for 10-12 hours.
If you want to bake bread right today, then proof for 3 hours at room temperature.
It is better to bake in a cauldron under a lid at 240 ℃ for the first 20 minutes, then without a lid for another 15-20 minutes at 220 ℃.
The bread turns out very tasty and one of my favorite recipes.
If you use Levito Madre 50% humidity starter, you will need 100-120 grams of starter and 270 grams of water. The rest is as in the recipe.
