** Zesty Oaty Biscuits recipe **
ingredients :
- 220gr (1 cup) softened butter
- 90gr (3/4 cup) white spelt flour (I used regular flour)
- 1 large egg
- 220gr (2/3 cup) thick honey (I used 180gr)
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- grated zest of one unwaxed orange
- grated zest of one unwaxed lemon
- 30gr (3 tbsp) sultanas
- 60gr (6 tbsp) dried apricots, roughly chopped
- 1 tsp baking powder
- 140gr (1 cup 1/2) rolled oats
method:
Cream the butter for 5 minutes. Add a spoon of flour & the egg and beat for a further 2 minutes. Gently fold in the rest of the flour along with all the other ingredients.
Cover and chill in the fridge for up to 1 hour.
Preheat the oven at 180°C.
Using a spoon, scoop out a small amount of the dough and place on a baking tray, making sure to leave space between each ball.
Bake for 10 minutes.
