Bulgogi kimchi Triple Cheese Quesadilla Recipe

Bulgogi
(This is for quick bulgogi without marination. Also little less salty than usual bulgogi because of kimchi and cheese)

2 LB Your favorite cut of beef, thinly sliced (We used rib meat)
1 Medium Onion (sliced) - to be used when cooking bulgogi

seasoning
3/4 cups Soy sauce
3 TBS Sugar
4.5 TBS Sesame oil
4 TBS Garlic, minced
Pinch Black pepper
1/3 Kiwi (optional. also can use Asian pear or Papaya)
3 Green onions, chopped

1. Mix all seasoning ingredients.
2. Mix seasoning with beef by gently massaging. (Cook within an hour. This recipe is for a quick bulgogi without marination)
3. Cook on med-high heat with a little bit oil.
4. Add sliced onions while sautéing.

Kimchi
Kimchi should be well fermented with sour taste.
Chop into small pieces and sauté with some butter on medium heat for 5-10 min.

Quesadilla ingredients
Flour tortilla
Bulgogi, cooked
Kimchi, cooked
Jalapeno peppers (optional)
Cheddar
Monterey Jack
Fresh Mozzarella
Cooking oil
Butter

1. Add cooking oil and butter on pre-heated griddle. (med heat)
2. Add tortilla and turn a few times so butter and oil is on the whole tortilla.
3. Add cheese, bulgogi, kimchi, jalapeños, more cheese on half of tortilla. Close the tortilla.
4. Cook both sides until golden brown.
