Here's why some restaurants ban substitutions to menu items.
1. Keeping the Integrity of the Food:
Chefs spend countless hours on their recipes. Every ingredient is there for a good reason.
2. Maintaining Kitchen Efficiency:
The menu and the kitchen work together. If an item has a ton of substitutions different from the original, it f*cks with the kitchen flow.
3. Applies to Big Changes Only:
If you want to remove one or two basic ingredients that is totally fine, but reworking an entire dish to be something else won't fly.
These restaurants are not out to get you with these limitations, but if you're going to change the food that much, maybe you should be eating somewhere else.
