
I love me a Greek salad so here’s a pretty standard recipe (I didn’t measure anything, just eyeballed it 😅)
Dressing:
Extra virgin olive oil
Salt
Dried basil
Half a lemon squeezed
Honey
*taste the dressing and see if you need more of any ingredient*
Salad: *make sure all ingredients are chopped up nicely so you have easy to eat salad*
Chickpeas
Cucumber
Cherry tomatoes
Red onions
Olives
Spinach
Kale
Goat cheese
Cover and store in the fridge until you’re ready to eat it! I like to prep 3-4 at a time so I have salads ready to go for a good part of my week!
