The main ingredient in halva is tahini paste, which comes from Turkey. All the ingredients, including caramel, beaten egg white and soapberry root (which gives the challah its characteristic fluffiness), are prepared in specialised mixers.

The mixture is then subjected to the traditional processing method known as ‘paddling’ in special bowls. Once prepared, the mixture is transferred to a moulding line, where it is portioned. The challah blocks are then manually wrapped in parchment paper before being automatically packaged.
