These Costillitas de Puerco en Salsa Roja are way up on my list of favorites, it's a very easy dish to prepare. I like using St Louis pork ribs because i think they are meatier than baby back ribs, but Baby back ribs and Pork Shoulder are great too. I think that fresh ground spices especially All Spice, Whole Cloves, Cumin and Oregano are a must in this dish and that is what makes it unique. I hope you give it a try. ❤️

INGREDIENTS---------------------------------------
3 1/2 lbs. St. Louis ribs (cut in half long way then ribs separated)
Salt (as needed)
3 Bay Leaves (in pot)
1 C. Water (in pot)

INGREDIENTS TO ROAST AND BLEND------------------------
5 large Roma Tomatoes
1/2 medium Onion
4 Garlic Cloves
1 Serrano Pepper
4 Chile de Arbol
2 Chile Guajillo
1 Tbs Chicken Bouillon
1 1/2 C. Water

INGREDIENTS FOR MOLCAJETE----------------
1 tsp whole Cumin
1 tsp Peppercorns
1 tsp Mexican Oregano
3 Whole Cloves
5 Whole Allspice

EXTRAS---------------
Beans
Mexican Rice
Corn Tortillas
