Good morning from Mendoza, Argentina! On our first sun-filled day in this beautiful city, we decided it was the perfect time to experience a classic Argentine asado—an authentic barbecue. The adventure begins with Sam and his dad heading out to buy leña (hardwood), as here in Mendoza, true asado is cooked with wood, not charcoal. With spirits high (and a little vermouth already enjoyed), the asado preparations get underway in the courtyard.

🔥 Lighting the Fire: The Argentine Way | 👨‍🍳

Argentine asado is all about patience and tradition.

Wood is lit in a dedicated section of the grill, where it burns down to glowing embers.

These embers are carefully moved under the grill, providing slow, even heat.

The secret: low and slow cooking for juicy, flavorful meat.

Unlike other countries where open flames might be used, Argentinians insist on embers for the perfect asado.

🍷 Vermouth, Picada & Prepping the Feast | 🍖
