
This is one of the easiest and yummiest samosa recipes!
Dough:
Mix 3 cups flour, ½ tsp cumin seeds, ½ tsp ajwain, salt to taste, and ½ cup desi ghee until well combined. Gradually add 1 cup warm water and knead into a firm dough. Let it rest for 20 minutes, then divide into small balls and rest for another 10 minutes.
Filling:
Boil a mix of golden & baked potatoes, then mash. In 2 tbsp oil, sauté 1 chopped onion for 2–3 minutes, then add:
• 1 tbsp crushed chili
• 1 tbsp coriander powder
• 1 tbsp cumin seeds
• 1 tsp turmeric powder
• 1 tsp amchur powder
• Salt to taste
Cook for 2 minutes, then add mashed potatoes. Stir on medium heat, then add ½ cup green peas (optional) and fresh cilantro. Let the mixture cool.
Assembly & Freezing:
Roll out dough, fill, and shape the samosas. Fry on medium heat for a few seconds (10% cooked), then let them cool completely on a paper towel. Freeze for up to 3–4 months.
