
Mom dad were craving old school patbingsu so we made it. Now most places freeze milk and shave the frozen milk, then add all kinds of toppings. But the old school way is to use pure ice and simple toppings like sweet red beans. Sometimes less is more! And making sweet red beans from scratch is just so much better!
For those who don’t have time, you can buy canned sweet red beans.
Sweet red beans
1. Soak adzuki red beans over night (optional, if you don’t soak, you will have to cook longer.)
2. Pre-boil to remove bitterness but this step is optional. (Boil in water for 5 min AFTER it comes to boil on high heat with lid on. Then drain and wash)
3. Boil in clean water (about twice volume of red beans) on high heat, lid on.
4. Once it starts to boil lower heat to medium (level 4 out of 9) and let it simmer for about 20 min or until beans starts to soften. Make sure you stir frequently so it doesn’t burn at the bottom. (For us it took 20 min to come to boil then another 20 min on lower heat but time will vary depending on soaking and amount of beans)
5. Before adding sugar, if there seems to be too much water, you can take some out and add back later. At the very end you don’t want it to be too watery.
6. Add sugar (1/2 volume of cooked red beans but you could taste it and add more if you want sweeter. Generally we like things on the less sweet side.)
7. Lower heat (level 3) and cook for another 20-30 min until it thickens to your liking. Add touch of mulyeot (Korean corn syrup) for shine but optional.
8. Cool and refrigerate or freeze.
Patbingsu toppings
-Sweet red beans
-Condensed milk
-Misutgaru (미숫가루) - This is Korean multigrain powder, You can find a bottle or individual packaged ones in Korean team and coffee section in Korean market.
-Injeolmi rice cake (rice cake coated with soybean powder) - we bought fresh ones from Korean market and froze but you could make this at home. We will share recipe another time for this rice cake.
We like it simple but others like to add ice cream, jellies, fruits, nuts etc.
