Here are 3 levels of onion rings. You’ll want to save the last recipe for later.
Level 1: Store-Bought Frozen
You'll find these in the freezer section with the other disappointing frozen appetizers.
Don't waste your money. We can do much better.
Level 2: Homemade Onion Rings
Half your onions, remove the skin, and separate the rings. To a bowl add some all purpose flour and a little salt. Fully coat your onions and set them aside.
To that same bowl add some Old Bay seasoning, smoked paprika, garlic powder, cayenne, and corn starch. Pour in some sparkling water and mix until smooth before pouring in your onions.
Once your onions are coated, transfer them right to some hot oil to fry before draining on a wire rack. Finish with some salt.
These are really good, but let's make them even better.
Level 3: The Ultimate Onion Rings
Cut your onion in half, peel off the skin, and separate the rings.
To a bowl, add some whole milk and a little hot sauce, and then place your onions in. To another bowl, mix AP flour with a little salt, and place your onions in to get them coated. Put those on a sheet pan and let them rest in the fridge for at least 2 hours.
Using your same milk mixture, add a couple of eggs, some smoked paprika, cayenne pepper, and a little more salt. Grab a third bowl and add panko breadcrumbs, smoked paprika, and cayenne.
Place your onions in the egg wash before moving them to the other bowl to get fully coated in breadcrumbs. Carefully move them into your hot oil and fry until perfectly golden.
Transfer them to a wire rack to drain and sprinkle on a little more salt before digging in.
These really are to die for. You've got to try them.
