
- Slice an eggplant into rounds.
- Season with salt, pepper, garlic powder, and paprika.
- Sprinkle generously with Parmesan cheese.
- Air-fry at 180°C (350°F) for 10-12 minutes until golden and crispy.
Caramelized Onions:
- Thinly slice onions and toss with olive oil and a pinch of salt.
- Air-fry at 160°C (320°F) for 8-10 minutes, shaking halfway through.
Couscous Salad:
- Add 1 cup of couscous to a bowl, pour over hot water with 1 tbsp olive oil and a pinch of salt, and cover for 5 minutes.
- Fluff with a fork and mix in 2 tbsp tomato puree for a vibrant color.
- Add chopped mint, green onions, halved cherry tomatoes, chopped jalapeños, and a squeeze of fresh lemon juice.

I added the smoked salmon and feta cheese to make it complete with protein but choose your favorite protein!
