1 Tbsp olive oil
1 medium onion, chopped
3 garlic cloves, minced
1 can chipotle peppers in adobo sauce (skip if you don’t want it spicy!)
1 packet taco seasoning (we love Siete)
3 medium chicken breasts
20 oz can crushed tomatoes
32 oz chicken broth
14 oz can black beans, drained and rinsed
14 oz can corn, drained and rinsed
Avocado
Sour cream
Tortilla strips
1/2 cup cilantro (for garnish)

Add all ingredients to your slow cooker, and set for 5 hours on high
•
Shred chicken breasts, return to slow cooker and stir
•
Serve, topping with cilantro, avocado slices, tortilla strips and sour cream
