‼️tip- cook the chicken at the same time you cooking the rice so it can be all done at the same time! The rice does need 5 minutes to rest after adding the cilantro ☺️
Ingredients:
3 garlic cloves
3-4 chipotle peppers in adobo
1/4 cup orange juice
1/4 cup pineapple juice
1 tbsp ACV
1 tbsp olive oil
1 tbsp brown sugar
1 oz achiote paste
1 tbsp chili powder I use New Mexico
1 tbsp chile ancho powder
1 1/2 tsp ground cumin
1 1/2 tsp oregano
1 1/2 tsp black pepper
1/2 tsp ground cinnamon
Salt I use 4 tsp for 3 1/2 lbs of chicken
3 1/2 small chopped chicken breast or thighs
1/2 onion
Pineapple chunks
