
The great Jaffa Cake debate - biscuit or cake? It may seem like a trivial snack-time squabble, but it hinges on a surprisingly scientific (and legal) distinction. Though Jaffa Cakes resemble biscuits in shape and are shelved alongside them in supermarkets, their physical properties align more closely with cake. When stale, cakes harden, whereas biscuits soften. That's a key difference rooted in moisture content and starch retrogradation. This seemingly minor detail became central in a landmark 1991 VAT tribunal in the UK, where McVitie’s successfully argued that Jaffa Cakes are, scientifically and legally, cakes.
