1. Cross-Train Your Team:
If someone calls out sick, you'll know that there is at least 1 other person there who can jump in to man that station for the day.
2. Don't Be Cheap:
If your team is working overtime to compensate for the missing team members, you need to be paying them more. Period.
3. Reduce the Menu Size:
A big menu becomes a nightmare when you're short on staff. Focus on the items that you have perfected and get rid of all the other subpar things.
